If Luke, cotf attacks a droid such as R2/3PO, and luke does UTF, since droids are immune to crits, would luke still get to use flurry attack? |

Yes, through the critical hit does not add additional damage, Luke gets to make an extra atack. Droids are immune to crits, but that does not stop Luke from getting a crit on them. |
