I've been looking around but don't see anything on how the proximity mines work exactly. I've been thinking of running a couple bothan saboteurs. Can you use proximity mines more than once on the same enemy in one turn? Could I mine Mace twice in the same turn, and if I can, would he then make two saves for reducing the damage on his next activation? Just curious how this works exactly.

No, Proximity Mines doesn't stack. It follows the same precedent as Force Corruption; you can technically use Force Corruption on a target multiple times, but they don't count as "Corrupted" more than once. For Corruption they would take the initial damage multiple times, but there is no real reason to stack Proximity Mines on someone.

If you used Proximity Mines 20 on someone and then Proximity Mines 40 on the same person, the highest one (PM 40) would be the one that is kept on them.
