I keep hearing folk talk about "defering" when it comes to map roll... what is that? How does it work?! Is that one of the official steps? If I'm running a tournament - how does it work?

You actually defer when it comes to choosing side. First both players roll for map choice. The high roll chooses either his own or his opponent's map. This choice cannot be deferred. The low roll (the player who didn't choose the map) now gets to either set up first or second. Setting up first means you get to pick side on the map. When people talk about "deferring", they are referring to allowing your opponent to set up and pick side first.

So losing the map roll means you can either set up first or defer to your opponent and force them to set up first. The advantage to this would be that if you make your opponent set up first you can set up in a way to take advantage of them, and you prevent them from doing that to you. The disadvantage, of course, is that you don't get to pick which side of the map you want (and you already didn't get to pick to play on the map you want, so sometimes you want to at least pick the side). If you are playing on a map with a more definite "good" side for you, you would usually want to set up first so that you can get it. If both sides are basically even, it can be a good idea to defer and set up second so you can see how your opponent sets up and come up with strategies to counter their set up (maybe line up some first round shots or set up in such a way that you can get first round gambit and they can't stop you).
